Homemade Pancakes

So, Monday morning and this morning I made egg-less pancakes. I wanted pancakes but didn't have any eggs. So, I got to looking on the computer for pancakes that didn't involve eggs. Well, I found a very easy recipe. And it tasted wonderful! And both the kiddos enjoyed them as well. They both out ate me. But that doesn't surprise me. Lyric ate 4 pancakes Monday and this morning and Mikey ate 3 pancakes Monday and this morning. I can see these pancakes in our very near future again. Like probably next week if not this weekend. :)

After we ate breakfast we cleaned up. Lyric wiped down their table and I vacuumed the floor, with Michael's help of course. I've got some pretty amazing kids, I must admit. Even if they don't listen to me very well. :(

Now, you probably want the recipe... Huh?
I found this recipe over at Rak's Kitchen.

I added a few things to them to make them a bit sweeter. :)
I used:
2 c flour
3 tbsp sugar
2 tbsp baking powder
a dash of salt
1 tbsp of cinnamon
2 c milk
2 tbsp oil
1 tbsp or so of vanilla

1. mix all of the dry ingredients first.
2. add the milk, oil, and vanilla. mix well. let sit for 10 minutes.
3. heat griddle.
4. pour batter, do not spread. heat until bubbles pop and the color changes. then flip and heat the other side until finished.
5. serve with butter, peanut butter, powdered sugar, and/or syrup. however your heart desires.
6. enjoy!

Yummy!

Tell me...

If you could eat any one meal every day, what would it be?

I would choose to eat my grama's breast of chicken. I think it is to die for! I love it.

Instead of the peas, we usually have corn and mashed potatoes. But since we don't have any more corn, I opted for peas.

Breast of Chicken

1 lb. of chicken breast
1 can of Cream of Chicken soup
1/4 c. water
Seasoned turken/chicken stuffing
1/3 c. melted butter
Sliced swiss/american cheese

Put your chicken breast in a baking dish (I cut mine up into bite sized pieces) you don't have to.
Put a slice of cheese on your chicken. Mix your soup and water together in a bowl, then pour over the chicken. Top your soup/water mixture with the stuffing mix. Melt your butter and pour over stuffing mix.

Bake in over at 350 degrees for 1 and a 1/2 hours.

Yummy!

We tried a new food today...
Can you guess what it is?

Spaghetti-O's! With meat balls.
She's attempting to try to poke her finger...
In the O's,
Like they would be a ring.
But...
Every time she does that...
They break.

"Yummy!"

Just look at that pretty girl!
With food all over her face!
It's even in her...
Hair,
Eyebrows,
Neck,
And looks like...
Santa Claus!

Breakfast!

Miss Lyric...
Loves to eat!

Especially her breakfast!
She eats all of her breakfast.
Every time!

And after she is done eating...
She likes to...

Comb her hair with her fork.
Just like in The Little Mermaid.

"Mommy,"
"That was yummy."

One of Lyric's Favorites...

So,

Lyric has a favorite food...
Can you guess what it could possibly be?

If you guessed Spaghetti, you are correct!

I could not believe how she managed to get it everywhere!

See... She got it everywhere, you can see it on her high chair, her arms, all over her face, it was in her hair and her eyebrows.

I did learn a lesson though, not to leave her in her clothes. Especially if they are white!

Can't I?

Why!?!?

Why can't I?
Why can't I do something...
Something that I want.
Something that I think is going to better my health.

Yeah,
It's not the "normal" diet that you would expect.

This week,
This week is going to be a weird week for our diet.
Me and Kati are trying two different kind of diets this week.

Starting tomorrow morning,
We are going to do the Hollywood Miracle Diet.
We have to fast for 48 hours and drink this drink and a lot of...
You guessed it!
Water!!!

Then...
On Thursday and Friday...
We are going to eat three fruits each day.
One fruit for breakfast.
One fruit for lunch.
And again,
One fruit for dinner.

The fruit that we eat for breakfast is a fruit that is high in carbohydrates.
So for breakfast I can any one of these...
A Banana
Raisins
Cherries
Grapes
A Mango
Dates
A Kiwi
A Fig
A Pear
Pineapple
An Orange
A Plum

For lunch I eat a fruit that is high in fiber.
Blackberries
An Orange
A Grapefruit
An Apricot
An Apple
A Fig
Raspberries
A Kiwi
A Mango
A Banana
Strawberries
A Pear

For dinner I eat a fruit that is a citrus fruit.
A Clementine
A Grapefruit
A Kumquat
A Mandarin
A Minneola
An Orange
A Pummelo
A Satsuma
A Sweety
A Tangerine
A Tangelo
A Ugli
Haha! Half of these I have never heard of.

We are only going to do this on Thursday and Friday.
Then,
Next week we are only going to eat these fruits for breakfast and lunch.
And for dinner,
We would eat a regular meal with our hubby's.

My Dinner

Sweet & Sour Chicken
You can just see the steam coming off the plate.
And for a fifteen minute meal,
It was delicious.
